Perhaps the most popular dessert enjoyed during winters in India is Gajar ka Halwa. Gajar ka Halwa was first introduced during the Mughal period. Halwa is an Arabic term for “sweet” so Gajar ka Halwa basically means “sweet carrot pudding”. It is also known as Gajorer or Gajrela and is very popular in North India, specially Punjab. It is made with red carrots (which make an appearance only during winters), milk and sugar.
1 kg fresh Red Carrots, grated
1 litre Milk
2 – 3 tbsp Ghee
30 gms Khoya
5 – 6 tbsp Sugar (or as per taste)

Boil the milk in a pan. In another pan, roast the grated carrots till all the water dries out.
Pour half of the boiled milk into the pan of roasted carrots. Let it cook on slow.
Once the milk gets soaked by the carrots, add the remaining milk and mix.
Add sugar as per taste. Mix well. Add more sugar if required (fresh carrots are generally sweet so not much sugar is required).
Cook on low flame till the milk gets absorbed. Make sure to keep stirring continuously so that the carrots don’t burn.
Pour in the ghee and mix well. Add khoya. Once it melts, switch off the gas.
